Now I love gumbo and I've tried it several different ways from someone's relative to five star restaurants. The roux has ranged from clear to very dark, some had pea and carrots along with ground beef while which should fall under some other name. Even though it may have been good or got the job done, it wasn't The Real Deal and this equates to basketball as that phrase is floated around too much.
